Pizza Sicilia
Ingredients for basic pizza dough
Enough dough for one full rectangular Baking tray

500 g white flour whole purpose

10 g dry Yeast or Active Fresh Yeast

5 g Salt
-
3 g sugar
-
300 g warm temperature water
-
extra virgin olive oil for the pizza trays
Ingredients for a Pizza Sicilia

3 pc cherry tomato (cut in half-skin off )

3 pc yellow tomato (cut in half-skin off )

150 g fresh ricotta cheese
-
6 pc seedless Kalamata black olives
-
½ eggplant cut in-ring and fried
-
3 tablespoon pizza tomato sauce
-
fresh thyme
-
salt / pepper
-
fresh parsley ( chopped )

olive oil extra virgin
Method

In a medium bowl, stir together the flour, yeast, salt and sugar. Add the water and using a wooden spoon mix until blended, at least 30s econds. the dough will look a bit stiff, cover the dough with a kitchen towel until the dough has more than doubled in volume

Remove the dough from the bowl, oil the baking tray, with your palms, gently pull, press and stretch the dough until all pizza filled the baking tray

Cover the dough with tomato sauce already prepared, and add any condiment you wish

Bake for 25 to 30 minutes in the oven at 250c
